Ingredients
- 400g penne pasta
- 2 cups cashews, soaked overnight
- 3 cloves garlic, minced
- 1 medium onion, diced
- 2 cups plant-based milk
- 2 tbsp nutritional yeast
- Salt and pepper to taste
- 1/4 cup fresh basil, chopped
- 2 tbsp olive oil
- Cherry tomatoes for garnish

Soak cashews overnight or in hot water for 1 hour until soft.

Cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water.

In a blender, combine soaked cashews, plant milk, nutritional yeast, half the garlic, salt, and pepper. Blend until smooth.

Heat olive oil in a large pan over medium heat. Sauté onions and remaining garlic until translucent.

Pour the cashew sauce into the pan and simmer for 5 minutes until slightly thickened.

Add cooked pasta to the sauce and stir well. Add pasta water as needed for desired consistency.

Stir in fresh basil and adjust seasoning to taste.
